Fall Baking

BlackberryBars01W

Who is ready for some Fall baking?
I love this time of year, as the leaves start changing, and the weather turns cool.  It makes me want to head straight for the kitchen!

I have an abundance of blackberries these days, and I love anything cookies or bars . . .

It was pretty much a match made in heaven.

Do you have more berries than you know what to do with?  These bars would be great with blueberries or raspberries too!

You'll Need:

1/2 cup granulated sugar
1/2 cup light brown sugar
1 tsp. ground cinnamon
1 teaspoon baking powder
2 1/2 cups all-purpose flour
1/2 cup quick cooking oats
1 cup butter
1 egg
1/4 teaspoon salt
4 cups fresh blackberries
1/2 cup granulated sugar
4 teaspoons cornstarch

Then:

1. Preheat the oven to 375 degrees, and grease a 9×13 inch pan.
2. In a medium bowl, combine granulated and light brown sugars, cinnamon, flour, oats, baking powder, and salt. Cut in butter and egg. Dough will be crumbly. Pat half of the dough into the pan.
3. In another bowl, stir together sugar and cornstarch. Gently mix in the blackberries. Sprinkle the blackberry mixture evenly over the crust. Crumble remaining dough over the berry layer.
4. Bake in preheated oven for 45-55 minutes, or until top is slightly brown. Cool before cutting into squares {if you can wait that long}.

And then you'll want to grab some whipped cream . . . and devour them.  That's what I did.

Those look so good! I'm actually baking today even though it's in the 90's. Is it me or are us NW women NOT made for heat?!

There is always something delicious being made at your house, isn't there? It's a miracle all of you aren't 300 pounds. Instead it would probably take all 6 of you to equal that! How do you do it?!?

Yum, yum, yum! I need some of that right now!!

Your pics are always so great! I don't know what is up. It's like I can't get good pics with the Auto setting on the Nikon anymore. I used to play with exposure or aperture or program, but then I was getting bad pics. I'll have to look and see if I messed it up or something. Can you mess up the Auto settings? I wouldn't think that would be possible. LOL!

That looks so amazing! And since you asked....I've never had more berries than I knew what to do with. In fact, I've never grown a berry in my life! LOL
And we won't feel fall for a long time still, so you enjoy it for the both of us!
